Chef Duskie Estes gave a little sneak preview of what she and John Stewart will be preparing at Sunday’s Cochon 555, taking place on Sunday at CIA Greystone in St. Helena. (You can read all about the fete here.)

Red Wattle pigs in the snow

They’ll be working with a Red Wattle pig, raised by Walnut Keep Farm & Vineyard. Among the dishes the couple hope will dazzle both judges and the public are Black Pig Bacon Toffee, “Bacon in the Batter” Waffles with Maple Ice Cream and Alton Brown’s Rookie of the Year Pig & Pineapple. Might Duskie be crowned Princess of Porc? Could be. She’s the only woman among the seven chefs. If anyone else wins, he’ll be crowned Prince.

The pork fest begins with a VIP reception at 3:30, followed by the pork extravaganza, which includes demonstrations, tastings, a whole roasted pig, wines and more, at 5 p.m. Cost is $175 if you want to be a VIP (where you’ll enjoy Hog Island oysters, artisan cheeses and reserve wines) and $125 if all you care about is pork.
